The estate's Mâcon Rouge is produced from very old gamay vines planted in the 1920s on clay, limestone and sandy soils. The yields are deliberately low (30hl per ha) in order to preserve a good concentration and the harvest is manual in boxes so as not to degrade the quality of the bunches and avoid oxidation. The vinification takes place without adding sulfur and with a gentle extraction of color and tannins for a fleshy and velvety mouth. The aging takes place in oak barrels for about 16 months before bottling without fining and without filtration. With rich fruit and vanilla notes it is a red wine ideal for terrines, cold meats, meats, grilled meats, powerful fish with spicy sauce, or even cheeses.
